About
This organic coffee comes from small producers in the Soconusco region of the Chiapas Highlands, around Motozintla in southern Mexico. Each producer processes their own cherries into parchment under their cooperative's quality control. The cooperative buys only the best parchment and delivers it to its dry mill in Tapachula. Because registering individually as an organic grower isn't practical for small farms, the coffee is exported by a company that specialises in organic-standard coffee. Harvest runs from January to April.
